This cheese is a combination of two French lactic cheeses, St Marellin and Chaource. A soft lactic cheese with a thin rind and soft, fudgy texture, becoming creamy and unctuous as it ages.
A cross between a Raclette style and a Gouda style, this cheese has a creamy/nutty/slightly sweet flavour profile with grassy and earthy tones. As it ages, it develops increasingly complex savoury and umami falvours. Made with animal rennet.
A rich and complex blue cheese, with creamy, buttery flavours, some fruitiness, and a little saltiness. It's blue mould delivers subtle spikes of flavour in the mouth, and exhibits delicious complexity and length of flavour. A very moreish cheese!
